Shrimp and Broccoli Rotini

Ingredients

6 glasses of water
8 oz raw rotini
3 cups fresh broccoli florets per pack
2 tablespoons olive oil
1 pound large shrimp, peeled and pitted
2 teaspoons grated lemon zest
2 ½ tablespoons unsalted butter
2 tablespoons fresh lemon juice
.63 teaspoons kosher salt
½ teaspoon freshly ground black pepper

This is a great recipe for pasta that you can make in a hurry from almost everything that is at your fingertips. You can try substituting shrimp with white beans to turn lemon pasta with seafood into a vibrant vegetarian dish.
In a large saucepan, bring 6 cups of water to a boil. Add the pasta and cook as directed on the package, without adding salt or fat. Add broccoli for the last 3 minutes of cooking; strain.Preheat a large skillet over high heat. Add the butter; stir to coat. Add shrimp to skillet; saute 2 minutes. Add the lemon zest; simmer for 1 minute. Add the pasta mixture, butter, lemon juice and salt to the pan. Saute for 1 minute, stirring occasionally; stir to coat. Sprinkle with black pepper; serve immediately.
