Shrimp Bruschetta al Limoncello

Ingredients
24 baguette slices
½ cup extra-virgin olive oil, divided
4 garlic cloves, thinly sliced
2 shallots, finely chopped
24 large shrimps, peeled and pitted
¼ cup fresh lemon juice
1 cup limoncello (lemon liqueur)
Salt
Freshly ground black pepper
Garnish with chopped fresh Italian parsley and lemon zest.
To make
Bruschetta is a classic appetizer, and shrimp is the real icing on the cake. They are mixed with a sauce of garlic, shallots, lemon juice and limoncello. A hint of lemon will make this dish truly unforgettable.
Brush the baguette slices with 2 tablespoons of olive oil. Grill or toast the bread slices until golden brown; place on a platter. Set aside.Saute the garlic and shallots in the remaining 6 tablespoons of hot olive oil in a large skillet over medium-high heat for 1 minute or until light golden brown. Add the prawns and simmer for 2-3 minutes or until the prawns are bright pink. Turn the shrimp over and cook for another 1 minute. Remove the shrimp with a slotted spoon.Add the lemon juice and limoncello to the pan; cook over high heat until reduced by two-thirds, about 2 minutes. Add the prawns to the mixture, stirring until the prawns are coated. Remove from heat; add salt and pepper to taste.Add 1 shrimp and sauce to each piece of toast. Decorate if desired.
