Shrimp in Cucumber Cups

Ingredients
1 (8 oz) pack softened cream cheese
¼ cup sour cream
1 tablespoon fresh dill
1 tablespoon chopped fresh green onion
1 tablespoon fresh lemon juice
¼ teaspoon salt
2 english cucumbers
30 perfect poached shrimp, peeled
Garnish: sprigs of fresh dill
To make
Poached shrimp plays a major role in this unusual appetizer of shrimp in cucumber cups.
Mix softened cream cheese, sour cream, dill, chopped green onions, freshly squeezed lemon juice and salt. Cut the cucumbers into 30 small circles (3/4-inch thick). Remove the seeds from the center of the cucumber slices using a melon press or a small spoon, leaving the shell 1/4-inch thick. Fill the cucumber cups with the cream cheese mixture; top each with 1 peeled poached shrimp. Decorate if desired.
