Simple Flaky Crab Cakes

Ingredients
2 tablespoons wholegrain breadcrumbs
1 tablespoon chopped fresh flat-leaved parsley
1 tablespoon finely chopped fresh green onion
1 tablespoon canola mayonnaise
½ teaspoon grated lemon zest
¼ teaspoon freshly ground black pepper
1 large egg, lightly beaten
8 ounces crab meat, peeled
1 tablespoon butter
1 ½ teaspoons canola oil

These crab patties are best paired with dry, fine-ground whole wheat breadcrumbs; if you use whole-grain pankos, they may fall apart in the pan. Green onions have a delicate onion flavor that won't overpower the crab flavor. This recipe can easily be doubled to serve for 4 servings.
Place the first 7 ingredients in a medium bowl, stirring occasionally. Add the crabs; mix gently until smooth. Chill the crab mixture in the refrigerator for 10 minutes. Divide the crab mixture into 4 equal portions. Using wet hands, carefully shape each serving into a 1-inch thick patty.Preheat a medium skillet over medium-high heat. Add the butter; beat until the butter melts. Add the butter; stir to coat. Carefully place the patties in the pan; cook for 4 minutes on each side, or until the crab patties are golden brown and cooked through.
