Simple Green Salad with Vinaigrette

Ingredients
2 tablespoons chopped red onion
1 ½ tablespoons red wine vinegar
2 teaspoons olive oil
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ teaspoon Dijon mustard
6 cups torn lettuce leaves
¼ cup thinly sliced red onion
1 pint cherry tomatoes, halved
To make
Top up any lettuce or field greens you have on hand with this simple dressing of olive oil, vinegar and Dijon mustard.
Combine the chopped onion and vinegar in a small bowl; let stand for 5 minutes. Add the oil, salt, pepper and mustard; mix well with a whisk.Place the lettuce leaves, chopped onion, and tomatoes in a large bowl; mix gently to make a smooth dish. Drizzle the vinaigrette over the salad; stir gently to coat.
