Ingredients
1 ½ tablespoons toasted ground sesame seeds
1 tablespoon coarsely ground Korean chili powder (gochugaru)
1 ½ tablespoons dark sesame oil
1 ½ tablespoons rice vinegar
1 ½ teaspoons low-sodium soy sauce
¼ teaspoon kosher salt
6 cups torn romaine lettuce
⅓ cup chopped red onion

I've been served this side dish in several restaurants, and I liked its nutty taste and absolute simplicity. The main thing is roasted ground sesame seeds: Look for roasted ground sesame seeds in Korean markets. They are not ground to powder, but rather slightly ground. You can prepare it yourself by roasting the sesame seeds until they are a thick golden color, letting them cool and grinding them with a mortar and pestle.
Combine the first 6 ingredients in a large bowl, stirring with a whisk. Add the lettuce leaves and onion; stir to coat. Serve immediately.
