What if we told you that you could make your favorite Starbucks-style pumpkin spice latte right here, from the comfort of your own home kitchen? Instead of ordering a large serving of homemade pumpkin spice syrup, we've simplified the process so that you can make as much pumpkin syrup as you need for a single latte. Feel free to expand the recipe if you want to cook more. If you don't have access to an espresso machine, any hard-brewed coffee will do. In addition, you can replace it with low-fat milk, although whole milk will be the most saturated and satisfying.
In a medium saucepan over medium-low heat, whisk together the pumpkin puree and pumpkin pie spices, and cook until the spices are completely dissolved and the mixture is fragrant, about 2 minutes.Whisk together the sugar and vanilla and cook until the pumpkin mixture has the consistency of a thick syrup, about 2 minutes. Do not bring to a boil.Whisk in the milk; cook until it is completely warmed through, about 5 minutes. (For a frothy consistency, whisk vigorously, use an immersion blender, or add the mixture to a blender.)Pour the pumpkin mixture over the espresso portions in a tall glass; garnish with whipped cream and cinnamon if desired. Serve immediately.
