4 (6 oz) boneless and skinless chicken thighs
½ teaspoon table salt
¼ teaspoon black pepper
1 cup new Yukon Gold potatoes, cut in half (about 3/4 pound).
1 ½ cups fresh asparagus, cut into 1-inch thick slices
¼ cup fresh or frozen green peas
Sliced fresh tarragon
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 tablespoon minced shallots
1 teaspoon dijon mustard
¼ teaspoon table salt
¼ teaspoon black pepper

Preheat the oven to 400°F. Heat the olive oil in a 12-inch skillet over medium-high heat. Sprinkle the chicken thighs with salt and pepper. Place the thighs, skin side down, in the heated oil and cook until the skin is golden brown, about 10 minutes. Turn the thighs over and cook until the other side is lightly browned, about 5 minutes.
