Skirt Steak Skewers with Cilantro-Garlic Sauce

Ingredients

7 peeled garlic cloves
1 cup fresh parsley leaves
1 cup fresh coriander leaves
1 tablespoon kosher salt, freshly ground black pepper
2 tablespoons lemon juice
1 cup extra virgin olive oil and 3 tablespoons
upskirt steak weighing 3 pounds

To make


Chop the garlic in a food processor until it is minced. Set aside 1 teaspoon. Add parsley, coriander, 1 teaspoon salt and a few pinches of pepper to the garlic remaining in the food processor. Chop it up. With the engine running, add lemon juice, then 1 cup of oil, in a steady stream. Pour into a bowl, cover and refrigerate. Cut the steak into 1-inch-thick strips. Place in a plastic bag with the remaining 3 tablespoons of oil, remaining salt, remaining minced garlic, and a generous sprinkle of pepper. Cover and refrigerate for 1 hour. Soak the bamboo skewers in water for 30 minutes. Preheat the broiler. Place the meat on skewers. Bake for 2-3 minutes on each side. Serve with the sauce at room temperature.
