Slow Cooker Sweet-and-Sour Chicken

Ingredients
1 ¼ pounds boneless and skinless chicken thighs
2 cups chopped red bell pepper
1 ½ cups unsalted chicken stock
1 cup chopped yellow onion
1 cup thinly sliced carrots
¼ cup low-sodium soy sauce
2 tablespoons low-sodium worcestershire sauce
1 tablespoon sambal olec (ground fresh chili paste)
3/4 cup unsalted ketchup, divided
¼ cup pineapple juice
2 tablespoons cornstarch
3 cups cooked brown rice
1 ½ teaspoons sesame seeds
1 ½ teaspoons chopped green onion

Perhaps this is our easiest recipe for cooking in a slow cooker. The pan does not brown, the sauce is not prepared at the last minute — all the magic happens right in the slow cooker. Do you want a crispy crust? Serve wrapped in the cabbage of your choice.
Add the chicken, bell pepper, chicken stock, onion, carrot, soy sauce, Worcestershire sauce, sambal olec, and 1/2 cup ketchup to a 6-quart slow cooker. Cover and cook over low heat until the chicken is easily minced with a fork, about 7 hours. Remove the chicken from the slow cooker. Chop the chicken and cover to keep it warm.Whisk together the pineapple juice and cornstarch in a small bowl. Turn up the heat in the slow cooker to high; slowly add the pineapple juice mixture and the remaining 1/4 cup ketchup. Cook uncovered until the sauce is thick enough to cover the back of a spoon, about 30 minutes. Add the chicken. Mix it up. Serve with rice, sprinkled with sesame seeds and green onions.
