Smoked Salmon and Egg Sandwich

Ingredients
4 cups water
1 tablespoon white vinegar
4 large eggs
¼ cup (2 ounces) 1/3 lower-fat cream cheese
2 tablespoons chopped red onion
1 tablespoon chopped dill
.38 teaspoons kosher salt
4 toasted whole-grain bread slices (1 oz each)
1 cup fresh arugula
4 oz smoked wild salmon

This decadent sandwich is perfect for a late breakfast. Choose salmon labeled "wild Alaskan" and you can be sure that you are getting organic seafood. You can also use soft-boiled eggs instead of poached eggs.
In a 12-inch skillet over medium-high heat, bring the water and vinegar to a boil. Add the eggs, one at a time; simmer for 3 minutes or until just cooked through.Combine the cheese, onion, dill, and 1/8 teaspoon salt; spread 1 tablespoon of the cheese mixture on each slice of bread. Sprinkle each serving with 1/4 cup arugula and 1 ounce of salmon. Remove the eggs from the pan with a slotted spoon; brush each sandwich with 1 egg.
