Smoked Salmon in Cucumber Boats

2 English cucumbers, peeled
½ cup plain Greek yogurt, fat-free
½ cup chopped smoked salmon (about 4 ounces)

You can prepare a salmon mix for the day ahead. Sprinkle with chopped parsley for a more finished look.
Cut off the ends of cucumbers. Cut each cucumber lengthwise in half. Remove the center of the cucumbers, leaving a 1/4-to 1/2-inch thick shell. Cut into 24 pieces (1 1/2 inches long). Save any remaining cucumber for another use.Combine the yogurt, salmon, and onion in a food processor; chop until almost smooth, scraping off the sides of the bowl if necessary. Add 2 teaspoons of the salmon mixture to each cucumber slice.
