Smoked Salmon Salad in Cucumber Cups

Ingredients
¼ cup finely chopped green onion
2 tablespoons plain 2% low-fat Greek yogurt
2 tablespoons canola mayonnaise
2 tablespoons peeled capers
1 tablespoon chopped fresh dill, divided
1 pack cold-smoked salmon (12 oz), coarsely chopped
3 english cucumbers
⅛ a teaspoon of freshly ground black pepper
To make
Substitute gravlax or even canned salmon in flakes for this appetizer if you prefer salmon that hasn't been smoked.
Combine the first 4 ingredients in a medium bowl. Add 2 teaspoons of dill and chopped salmon.Peel the cucumbers by cutting them into alternating vertical strips. Cut the cucumbers into 3/4-inch-thick slices and remove the seeds with a small spoon or melon ball, leaving the bottom untouched to form a cup.Add about 1 tablespoon of the salmon mixture to each cucumber bowl. Sprinkle the remaining 1 teaspoon of dill and pepper evenly over the cups.
