7 fresh peaches, peeled and sliced (approximately 7 3-pound cups).
1 cup sugar
2 tablespoons all-purpose flour
2 tablespoons fresh lemon juice
¼ teaspoon ground cinnamon
½ (15 oz) chilled pieces, packed
Parchment paper
1 egg white, lightly beaten
1 tablespoon sugar

Preheat the oven to 450 degrees. Melt the butter in a roasting pan over medium-high heat. Add the peaches, 1 cup sugar, and the following 3 ingredients; bring to a boil over medium heat, stirring occasionally. Reduce heat to medium-low; simmer 7-8 minutes or until tender.Meanwhile, roll out the cake on a flat surface. Cut into 12 circles using a 3 1/2-inch round mold with fluted edges. Make 4 small holes in the center of each circle using a plastic straw. Place the slices on a baking sheet lined with parchment paper. Whisk together the egg white and 1 tablespoon of water. Brush the circles with the egg mixture; sprinkle with 1 tbsp sugar.Bake at 450 ° C for 8-10 minutes or until lightly browned.Place 1 circle of dough in each of the 6 (7-ounce) cookie cutters. Place the peach mixture on the dough circles; top with the remaining dough circles.
