Southern Field Peas

Ingredients
2 teaspoons olive oil
½ cup chopped onion
2 garlic cloves, minced
3 cups fresh peas with pink eyes
3 cups water
3 slices of bacon
½ teaspoon salt
½ teaspoon freshly ground black pepper

Southerners from Cooking Light Test cuisine like this dish. It uses pink-eyed peas, which is a local favorite, but feel free to use black-eyed peas instead.
Preheat a large saucepan over medium-high heat. Pour the oil into the pan; stir to coat. Add the onion and garlic; simmer for 2 minutes. Add the peas, 3 cups water, and bacon; bring to a boil. Reduce heat; simmer under partially covered lid for 30 minutes or until tender. Skip the bacon. Season with salt and pepper.
