Soy and Sesame Kale Chips

Ingredients
7 to 8 oz * (1 small bundle) Lacinato cabbage (often sold as "dinosaur cabbage" or "Tuscan cabbage")
1 ½ tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon sesame seeds

The secret to getting a crispy crust is to keep the leaves from pressing down on the baking trays. Also, keep an eye out for them — they can burn quickly.
Preheat the oven to 300°. Rinse the cabbage and pat dry thoroughly with a kitchen towel. Tear the leaves off the ribs; discard the ribs. Cut the leaves into 4-inch pieces. Pour the oil and soy sauce into a large bowl, add the cabbage, and stir to coat evenly.Arrange the leaves in a single layer on 2 lined baking sheets. Bake, repositioning the pan after 13 minutes. Sprinkle with sesame seeds and bake until the leaves are crisp but not browned, another 5-7 minutes.* You can use larger bunches, but you'll need more oil and seasoning, and possibly a third skillet.
