Soybean Hummus

Ingredients
1 cup frozen, peeled edamame (green soybeans)
¼ cup water
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon kosher salt
½ teaspoon minced garlic
⅛ a teaspoon of hot pepper sauce
2 tablespoons chopped fresh flat-leaved parsley
6 (6-inch) seeds, cut into 8 slices

In this recipe, Littlewood uses frozen peeled edamame instead of chickpeas to make hummus. It is also good as a spread on a flatbread for a sandwich with stuffing or as a sauce with sliced raw vegetables. Add extra flavor to your pita chips by lightly browning them, then grate the cut side of half a raw garlic clove.
Combine soy beans and 1/4 cup water in a small saucepan; bring to a boil. Reduce the heat and simmer for 10 minutes. Drain the water.Combine the soy beans, oil, juice, salt, garlic, and hot pepper sauce in a food processor; beat until smooth. Add the parsley and mix until smooth. Serve with pita bread slices.
