Spaghetti With Shrimp and Broccoli

Ingredients
8 cups broccoli florets (2 large heads)
Good olive oil
1 pound shrimps, peeled, and 16-18 shrimps
1 pound imported good quality spaghetti
8 cloves large garlic cloves
½ teaspoon crushed red pepper flakes
½ cup fresh parsley
1 cup fresh parmesan cheese plus xtra sauce to serve

Preheat the oven to bring a large pot of water and 2 tablespoons of salt to a boil.Place the broccoli, 1/4 cup olive oil, 2 tablespoons salt and 1/2 tablespoon pepper on a baking sheet, arrange and saute for five minutes. Add the shrimp to the broccoli, mix well and spread in a single layer. Saute the prawns and broccoli for 8-10 minutes, until the prawns are cooked through.Meanwhile, cook the pasta in a pot of boiling salted water according to the directions on the package. Set aside 1 1/2 cups of cooking water before draining the pasta.Heat 1/3 cup ovr medum heat olive oil in a saucepan large enough to hold the pasta, such as in a 12-inch saute pan or large shallow pan. Add the garlic and cook for one to two minutes, stirring frequently, until they are golden around the edges. Add the red pepper flakes and simmer for another 30 seconds. Carefully add the remaining pasta cooking water to the pan and the oil and bring to a boil. Then turn down the heat, add 1 tablespoon of salt and simmer for about five minutes, until the amount of liquid is reduced by about a third.Add the pasta and garlic butter and stir to combine. Remove from the heat, add the cooked shrimp and broccoli, as well as the parsley and parmesan, and mix well. Let the pasta cool on the fire for five minutes to allow the sauce to soak into the pasta, then season to taste and serve warm, with a sprinkle of parmesan cheese on top.
