Spaghetti with Smoked Mozzarella

Ingredients
8 oz raw spaghetti
2 cups (1-inch thick) chopped asparagus
¾ cup low-fat 2% milk
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
2 large eggs, lightly beaten
2 garlic cloves, minced
⅓ cup (1 1/2 oz) finely chopped smoked mozzarella cheese
⅓ cup (1 1/2 oz) grated fresh parmesan cheese

¼ teaspoon ground red pepper flakes
To make
Smoked mozzarella gives carbonara pasta a taste without adding bacon. Chop the mozzarella as small as possible so that it melts quickly. Juicy slices of tomatoes, drizzled with tart-sweet balsamic vinegar, are perfect for garnish.
Boil the pasta in boiling water for 7 minutes; add the asparagus; cook for 2 minutes or until the pasta is al dente and the asparagus is crisp and tender. Drain the water.Combine the milk, salt, black pepper, eggs and garlic in a roasting pan, stirring with a whisk, until smooth. Add the pasta mixture; cook over medium heat for 3 minutes or until slightly thick and creamy, stirring constantly. Add the cheese, parsley and red pepper flakes; cook for 1 1/2 minutes or until the cheese is melted, stirring constantly. Serve immediately.
