Ingredients

8 (10-inch) flat wooden skewers
3 slices of hard white bread, cut into small pieces
1 ½ pounds ground beef
½ cup finely chopped yellow onion
¼ cup chopped fresh flat parsley leaves
¼ cup chopped fresh coriander leaves
1 ½ teaspoons kosher salt
1 teaspoon ground cumin
½ teaspoon ground allspice
½ teaspoon ground coriander
½ teaspoon freshly ground black pepper
½ teaspoon ground red pepper flakes
Spray for cooking vegetables
8 preheated circles of pita bread
Yogurt and tahini sauce

Serve this savory beef with toasted bread and a spicy herb salad.
Soak the skewers in water for 30 minutes. Meanwhile, put the bread and water so that they cover it in a small bowl; let stand for 10 minutes.
