Spicy Ham-and-Bean Soup

Ingredients

1 ¼ cups dried sea beans
2 liters of water
1 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped celery
¼ cup chopped fresh parsley
1 ½ teaspoons black pepper
2 ½ teaspoons crushed jalapeno peppers, pitted
2 garlic cloves, minced
1 ham bone (18 oz) (from 8 1/2-pound cooked ham with low sodium content)
2 cups finely chopped maple-coated ham (about 9 ounces)
¼ cup finely chopped fresh basil
1 can unsalted whole tomatoes, peeled and chopped (14.5 oz)
1 can unsalted tomato sauce (8 oz)

To make


Peel and wash the beans; bake in a large roasting pan. Cover the beans with water so that they are 2 inches higher and bring to a boil; cook for 2 minutes. Remove from heat; cover and let stand for 1 hour.Drain the beans and return to the pan. Add 2 liters of water and the following 8 ingredients (water through the ham bone). Bring to a boil; cover, reduce heat, and simmer for 1 hour or until the beans are tender. Remove from the heat; discard the ham bones.Put 2 cups of the bean mixture in a blender and whisk until smooth. Return the mixture to the pan; add the ham and remaining ingredients. Bring to a boil; cover, reduce heat, and simmer for 10 minutes or until warmed through.
