Spicy Pork Skewers

Ingredients
1 ¼ pounds ground pork
1 ½ tablespoons minced garlic
2 teaspoons ground cumin
2 teaspoons ground paprika
⅓ cup finely chopped onion
1 ½ teaspoons salt
1 teaspoon freshly ground black pepper
To make
Moroccan-style meat kebabs, or kefta, are made from beef and shaped into sausages. Our version uses pork rolled into small meatballs.
Soak 8 bamboo skewers in water for at least 30 minutes (if using metal skewers, go to step 2). Drain and set aside.Meanwhile, in a medium bowl, combine the pork, garlic, cumin, paprika, onion, salt and pepper. Form small meatballs, each about the size of a golf ball, then string the meat on skewers.Roast the skewers over medium-high coals or over medium-high heat on a gas grill (you can only hold your hand at grill level for 4-5 seconds); close the lid of the gas grill. Cook, turning once, until they are browned on both sides and no longer pink in the center, about 8 minutes. Serve warm.Note: A nutritional analysis is provided for each serving.
