Ingredients

1 carrot, peeled
2 cups low-fat, low-sodium chicken stock, divided
⅓ cup of low-fat peanut butter
1 tablespoon minced peeled fresh ginger
1 tablespoon low-sodium soy sauce
2 tablespoons honey
1-2 teaspoons crushed red pepper
1 clove garlic, minced
1 pound skinless and boneless chicken breast
5 cups cooked soba (about 10 ounces raw buckwheat noodles)
6 tablespoons chopped green onions
6 tablespoons chopped unsalted peanuts, dry-fried

Classic Asian tastes are combined in a quick and easy dish of chicken with spicy soba noodles, which you can serve on the dining table in no time.
Cut the carrots lengthwise into thin strips using a vegetable peeler.Combine 1/3 cup broth, peanut butter, ginger, soy sauce, honey, pepper, and garlic; whisk until smooth.Put the chicken in a large saucepan; add 1/2 cup broth. Bring to a boil. Reduce the heat and simmer for 4 minutes or until the chicken is tender. Remove from heat; let stand for 20 minutes. Drain; cut the chicken into 2-inch-thick pieces. Combine carrots, peanut sauce, chicken, and noodles in a large bowl; toss to coat. Sprinkle with onion and peanuts.
