Bookmark this page

Ingredients
1 dozen large hard-boiled and peeled eggs
6 tablespoons mayonnaise
2 to 4 tablespoons pickled chopped jalapeno pepper, minced
1 tablespoon mustard
½ teaspoon cumin
⅛ a teaspoon of salt
Garnish with chopped fresh cilantro
To make
These spicy eggs in a sauce stuffed with mayonnaise, mustard, cumin and pickled jalapeno and sprinkled with cilantro are sure to appeal to anyone who likes a little warmed up. This is a terrific alternative to traditional eggs in sauce, which are usually made with sweet pickles and paprika.
Cut the eggs lengthwise in half and carefully remove the yolks. Mash the egg yolks; add the mayonnaise and the following 4 ingredients. Using a spoon or straw, spread the egg-yolk mixture over the egg halves. Cover and refrigerate for at least 1 hour or until ready to serve. Decorate if desired.
