2 cups chopped onion

¾ cup panko (Japanese breadcrumbs)
¼ cup low-sodium, fat-free chicken stock
3 tablespoons chopped fresh flat-leaved parsley
1 tablespoon low-sodium soy sauce
1 tablespoon Srirachi (hot chili sauce, such as Hai Fong)
1 tablespoon worcestershire sauce
½ teaspoon freshly ground black pepper
1 ½ pounds ground turkey breast
1 large egg, lightly beaten
Cooking Spray
½ cup ketchup
1 tablespoon brown sugar
⅛ a teaspoon of dry mustard
⅛ 1 teaspoon ground nutmeg

Spread the ketchup mixture evenly over the meatloaf; bake at 350 ° for 40 minutes or until the thermometer reads 160 °. Allow to infuse for 10 minutes before serving.
