Spinach-and-Avocado Salad

Ingredients
3 tablespoons fresh lime juice
3 tablespoons olive oil
1 tablespoon chopped fresh cilantro
1 teaspoon sugar
¼ teaspoon ground cumin
¼ teaspoon kosher salt
⅛ a teaspoon of ground black pepper
1 avocado, peeled, pitted and thinly sliced
1 small red onion, thinly sliced
11 oz baby spinach
To make
Make a simple spinach salad special by adding avocado, spices, and fresh cilantro. Prepare it in advance, refrigerate and stir just before serving.
Whisk together the lime juice, oil, coriander, sugar, cumin, salt and pepper in a large serving bowl. Add the avocado and red onion. Top with spinach. (The salad can be prepared and stored in the refrigerator for up to 2 hours.) Stir well before serving.
