Spinach and Garlic Mashed Potatoes

Ingredients
1 ¼ pounds red potatoes, cut into quarters
½ cup whole buttermilk
2 tablespoons plus 1 1/2 teaspoons olive oil, divided
2 teaspoons minced fresh garlic
2 cups chopped fresh spinach
½ teaspoon kosher salt
¼ teaspoon ground black pepper
To make
Whisk in the mashed potatoes, adding healthy spinach and aromatic garlic.
Place the potatoes in a microwave-safe bowl; cover tightly with plastic wrap. Cut a 1/2-inch incision in the plastic. Reheat in the microwave on high power for 8 minutes or until tender; transfer to a bowl. Microwave the buttermilk in a cup for 30 seconds; drizzle the buttermilk and 2 tablespoons of olive oil over the potatoes. Mash until smooth.While the potatoes are cooking, heat 1 1/2 teaspoons of olive oil in a large skillet over medium-high heat. Add the minced fresh garlic to the pan; cook for 1 minute or until fragrant. Add the spinach to the skillet; cook for 1 minute or until the spinach wilts, stirring constantly. Mix the spinach mixture, salt and pepper with the potatoes. Serve the potatoes immediately.
