¾ cup New York pizza sauce
2 tablespoons grated fresh parmesan cheese
1 ½ cups loosely packed young spinach leaves
1 teaspoon minced garlic
1 ¼ cups (5 ounces) grated partially fat-free mozzarella cheese
⅓ part cup-low-fat ricotta cheese
2 plum tomatoes, peeled and thinly sliced

Remove the homemade pizza dough from the refrigerator; let stand at room temperature for 1 hour.Preheat the oven to 500 degrees.Brush a 12-inch perforated pizza pan with cooking spray.Place the dough on a lightly floured surface; roll out in a 12-inch circle. Transfer the dough to the prepared pan, shaking off any excess flour. Brush the dough evenly with butter. Spread the New York–style pizza sauce evenly over the dough, leaving a 1/4-inch thick rim. Sprinkle with parmesan cheese; top evenly with spinach and garlic. Sprinkle the spinach with mozzarella. Place the ricotta in teaspoons on top of the mozzarella. Bake at 500 ° C for 12 minutes or until the mozzarella is melted and the crust is lightly browned. Let stand for 5 minutes; top with sliced tomatoes. Cut into 6 slices.
