Spinach Salad with Maple-Dijon Vinaigrette

Ingredients

¼ cup maple syrup
3 tablespoons minced shallots (about 1 medium size)
2 tablespoons red wine vinegar
1 tablespoon canola oil
1 tablespoon rustic dijon mustard
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 clove garlic, minced
1 cup chopped mushrooms
½ cup vertically sliced red onion
½ cup chopped Braeburn apple
4 bacon slices, seared and crumbled
1 pack fresh spinach (10 oz.)

To make

The syrup gives the dressing a rich, sweet base. When using a lighter variety of syrup, a more delicate vinaigrette is obtained. To make even more maple punch, try bacon with maple sauce, avoiding products with imitation maple sauce, which tends to taste artificial. As one online reviewer put it, "Fantastic! Combine the first 8 ingredients in a large bowl, stirring with a whisk. Add the mushrooms and remaining ingredients; mix well to coat.
