Split Pea Soup with Cheddar Toasts
Bookmark this page

Ingredients
1 16-ounce bag of dried green peas, washed and sorted
2 hams of smoked ham
3 carrots, cut into 2-inch thick slices
2 parts leeks, white and light green, finely chopped
1 bay leaf
¼ cup finely chopped fresh parsley
1 teaspoon salt
½ cup shredded cheddar
8 1/2-inch thick baguette or rustic bread slices, sliced crosswise
To make
Put the peas, ham, carrots, leeks, bay leaf, parsley and salt in the slow cooker. Stir in 6 cups of water, cover, and cook over low heat until the peas are tender and the ham is separated from the bones, 6 to 8 hours. Remove the hams, chop the meat and return it to the stove so that it does not cool down.Preheat the oven to 400 ° F; line a baking sheet with foil around the edges. Sprinkle the bread slices with cheese. Place on a baking sheet and cook until the cheese is melted and bubbling, 1-2 minutes. Pour the soup on plates, add a piece of cheese toast to each plate, and serve.
