Spring Salad with Grapes and Pistachio-Crusted Goat Cheese

¼ cup peeled and finely chopped pistachios, dry-fried
½ cup (4 oz) goat's cheese
¼ cup light herb vinaigrette
1 pack (5 oz) of greens for a gourmet salad or spring lettuce mix
1 cup seedless red grapes, cut in half
¼ teaspoon freshly ground black pepper

Of course, you could simplify the preparation by simply sprinkling the salad with crumbled goat cheese and chopped pistachios. But our method ensures that each piece of cheese with a grassy-creamy taste will contrast with the salty crunchy nuts. Serve with pasta or chicken.
Place the pistachios in a shallow dish. Divide the cheese into 12 equal parts and roll into 12 balls. Roll each ball in the pistachios until they are well coated. Set the pistachio-crusted cheese balls aside.Combine a light vinaigrette with herbs and herbs in a large bowl and gently mix to coat evenly. Spread the green mixture evenly over 4 salad plates. Sprinkle each serving with 1/4 cup grapes and 3 cheese balls. Sprinkle the salads evenly with pepper and serve immediately.
