Steak Tips with Peppered Mushroom Gravy

Ingredients
2 cups raw egg noodles
Cooking Spray
1 pound tenderloin chop, cut into 3/4-inch chunks
1 tablespoon butter
2 tablespoons finely chopped shallots
1 pack (8 oz) chopped baby bell mushrooms
1 teaspoon minced garlic
1 tablespoon low-sodium soy sauce
3 tablespoons all-purpose flour
1 ½ cups low-fat, low-sodium beef broth
½ teaspoon ground black pepper
¼ teaspoon salt
3 sprigs fresh thyme
1 teaspoon fresh thyme leaves (optional)
To make
Making a quick gravy with thyme sprigs saves time on peeling the tiny leaves from the stalks, but it also adds a woody herb flavor to this steak. Serve on top of the pasta as directed in the instructions.
Cook the noodles according to the directions on the package, without adding salt or fat; drain.While the noodles are cooking, heat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the steak; saute for 5 minutes, browning on all sides. Remove from the pan; cover.Melt the butter in a skillet over medium-high heat. Add shallots and mushrooms; simmer 4 minutes. Add garlic; simmer for 30 seconds. Add soy sauce. Sprinkle the mushroom mixture with flour; cook for 1 minute, stirring constantly. Gradually add the broth, stirring constantly. Add pepper, salt and thyme sprigs. Bring to a boil; cook for 2 minutes or until thickened. Return the beef to the pan; cook for 1 minute or until it is completely warmed through. Discard the thyme sprigs. Garnish with thyme leaves if desired.
