Steaks with Caramel-Brandy Sauce

Ingredients
4 (6 oz) beef tenderloin fillet
1 teaspoon salt
1 teaspoon pepper
3 tablespoons butter, divided
3 tablespoons brandy
1 tablespoon light brown sugar
¼ cup whipped cream
Garnish: fresh green onions
To make
According to this recipe, steaks are cooked to medium roast. Reduce the heat and increase the cooking time so that the steaks are better cooked.
Sprinkle the steaks evenly with salt and pepper.Melt 1 tablespoon butter in a medium skillet over medium-high heat. Add the steaks and cook for 3 minutes on each side or until desired browning. Remove the steaks from the pan and leave them warm.Add the brandy to the pan, stirring to remove any particles from the bottom of the pan. Add the remaining 2 tablespoons butter and sugar; cook, stirring constantly, until the sugar is dissolved and browned.Remove the pan from the heat; whisk the cream until smooth. Return to the heat and bring to a boil; cook, stirring constantly, for 1 minute or until thickened. Serve immediately on top of the steaks. Decorate if desired.
