Steamed Carrots with Garlic-Ginger Butter

Ingredients
2 garlic cloves, minced
1 pound young carrots with peeled tops
1 tablespoon butter
1 teaspoon minced peeled fresh ginger
1 tablespoon chopped fresh cilantro
½ teaspoon grated lime zest
1 tablespoon fresh lime juice
¼ teaspoon salt

Be sure to use real young carrots with tops. So-called baby carrots sold in bags are often shredded mature vegetables; their texture will be too harsh for this recipe.
Prepare the garlic; let stand for 10 minutes.Cook the steamed carrots, covered, for 10 minutes or until tender.Heat the butter in a large nonstick skillet over medium-high heat. Add the garlic and ginger to the skillet; cook for 1 minute, stirring constantly. Remove from the heat; add the carrots, coriander, and other ingredients.
