Steamed Chicken and Vegetables with Soy Dipping Sauce

Ingredients
4 skinless and boneless chicken breast halves (6 oz each)
¼ teaspoon salt
¼ teaspoon ground black pepper
3 cups (2-inch) asparagus slices
1 cup halved sugar snap peas
¼ cup coarsely chopped fresh cilantro
¼ cup low-sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons mirin (sweet rice wine)
½ teaspoon dark sesame oil

Believe it or not, you can eat steamed chicken with veggies in soy sauce for just 250 calories, leaving room for a glass of wine at dinner.
Sprinkle the chicken with salt and pepper; place the chicken in a large vegetable steamer. Pour water into a large saucepan 1 inch deep; bring to a boil. Place the steamer in the skillet; cover and cook the chicken for 10 minutes. Add the asparagus and peas to the steamer; cover and cook for 2 minutes or until the vegetables are crisp and tender.Combine the cilantro and other ingredients, stirring with a whisk. Serve the sauce with chicken and vegetables.
