Stewed Pork and Squash

Ingredients
1 tablespoon canola oil
¾ cup chopped onion
1 medium garlic clove, minced
1 pound boneless pork shoulder, cut into 1/2-inch thick pieces
1 ½ tablespoons chili powder
1 teaspoon ground cumin
⅛ a teaspoon of salt
¼ teaspoon ground red pepper flakes
1 ½ cups fat-free, low-sodium chicken stock
1 can stewed tomatoes, skinless (15 oz.)
4 cups diced peeled courgettes with nuts (about 1/2 pound)
To make
Heat the oil in a large saucepan over medium-high heat. Add the onion and garlic; simmer for 2 minutes, stirring frequently. Add the pork; cook for 5 minutes, until lightly browned on all sides. Add the ground chili pepper, cumin, salt and red pepper; cook for 30 seconds, stirring constantly. Add broth and tomatoes; bring to a boil. Cover, reduce heat and simmer for 1 1/2 hours or until pork is almost tender, stirring occasionally. Add the zucchini and nuts; simmer for 30 minutes or until the pork and zucchini are tender.
