Sticky Date and Coconut Cake

Ingredients
Cake:
1 cup chopped pitted dates
1 cup of water
1 teaspoon baking soda
3 tablespoons butter
Pinch of salt
6 ¾ ounces all-purpose flour (approximately 1 1/2 cups)
1 teaspoon baking powder
½ teaspoon salt
1 cup granulated sugar
1 teaspoon vanilla extract
1 large egg, lightly beaten
Cooking Spray
Topping:
⅔ cup light brown sugar
½ cup coconut flakes with sugar
2 ½ tablespoons butter
2 teaspoons skimmed milk
To make
Brush the bottom and sides of the mold with cooking spray so that the pudding-like cake with dates and coconut chips doesn't stick.
Preheat the oven to 350 degrees.To make the pie, combine the first 5 ingredients in a small saucepan; bring to a boil, stirring occasionally. Remove from the heat and let stand for 10 minutes or until the dates are tender.Pour the flour with a dry measuring spoon into dry cups; flatten with a knife. Combine the flour, baking powder, and 1/2 teaspoon salt in a bowl. Add the date mixture, granulated sugar, vanilla and egg until smooth. Pour the batter into a 9-inch-diameter springy mold coated with cooking spray. Bake at 350 ° C for 20 minutes.To make the filling, combine the brown sugar and other ingredients in a small saucepan; bring to a boil. Reduce the heat and simmer for 1 minute. Sprinkle the cake with the brown sugar mixture; bake at 350 ° C for another 13 minutes or until a wooden stick inserted in the middle comes out clean. Cool in the pan for 5 minutes on a wire rack. Run the knife along the outer edge. Cool completely on a wire rack.
