For Test Kitchen director Robbie Melvin, Thanksgiving will come only after a dish of his grandmother's “old-school” cuisine appears on the table. Her celery sticks stuffed with cream cheese have been loved for generations. Although a classic dish is hard to improve on, he took inspiration from her recipe when creating this delicious version. Its cream cheese filling is seasoned with honey, toasted walnuts and cinnamon. Transfer the filling to the celery stalks using a zip-up bag for a neater serving. Serve as a festive snack with drinks or as a fun snack between meals.
Cut each celery stalk into 2 (3-inch) pieces. Combine the cream cheese, walnuts, honey, salt, and cinnamon in a medium bowl until smooth. Spoon the mixture into a zippered plastic bag with a 1/2-inch-thick corner cut off or pastry bag; slice the celery into chunks. Sprinkle with green onions and serve immediately. Or cover and refrigerate until tender before serving.
