Superfast Chicken Posole

Ingredients
1 tablespoon olive oil
1 teaspoon dried oregano
¾ teaspoon ground cumin
½ teaspoon chili powder
2 garlic cloves, minced
1 pack (8 oz) chopped onion and celery mixture
4 canned tomatillos, washed and coarsely chopped
2 cans of low-sodium, fat-free chicken stock (14 oz each)
1 can white hominy (15 oz), washed and dried
2 cups sliced skinless and boneless chicken breast for grilling
1 tablespoon fresh lime juice
¼ teaspoon salt
¼ teaspoon ground black pepper
½ ripe peeled avocado, diced
4 radishes, thinly sliced
Coriander leaves (optional)
To make
Heat the olive oil in a large saucepan over medium-high heat. Add oregano and the next 4 ingredients (combine onion and celery); simmer for 2 minutes. Add tomatoes; cook for 1 minute. Add broth and hominy; cover and bring to a boil. Remove the lid and cook for 8 minutes. Add the chicken and cook for 1 minute or until warmed through. Remove from heat; add lime juice, salt and pepper. Spread evenly over 4 bowls. Top with avocado and radishes. Garnish with coriander if desired.
