Sweet Corn Soup with Crab

Ingredients
2 tablespoons extra-virgin olive oil, divided
1 Vidalia onion, chopped
5 cups fresh corn kernels
.38 teaspoons kosher salt
¼ teaspoon ground black pepper
2 cups water
⅓ cup in half

This soup is full of deliciously sweet fresh corn and savory pieces of crab meat.
Preheat a roasting pan over medium-high heat. Add 1 tablespoon butter; whisk to coat. Add the onion; simmer for 3 minutes. Add corn, salt and pepper; simmer 3 minutes. Add 2 cups of water; bring to a boil. Reduce heat; simmer 6 minutes. Combine the corn mixture and potato halves in a blender. Remove the center part of the blender lid (to release steam); secure the blender lid to the blender. Cover the hole in the blender lid with a towel (to avoid splashing). Whisk until smooth.Place the peas in a small bowl; mash lightly with a fork. Add the remaining 1 tablespoon of oil, basil, and crab; serve on top of the soup.
