4 cups chopped sweet onions (about 2 large)
½ cup apple cider vinegar
½ cup low-sodium, fat-free chicken stock
1 tablespoon brown sugar
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

This tangy-sweet dressing is perfectly paired with tenderloins marinated in whiskey, or served as an appetizer on top of toasted baguette slices. You can prepare the dressing a day or two ahead and put it in the refrigerator; bring it to room temperature before serving. Prepare one or two extra servings for a festive treat.
