Tenderloin Steaks with Red Onion Marmalade

Ingredients
Cooking Spray
1 large red onion, cut into rings (about 2 cups )
2 tablespoons red wine vinegar
2 tablespoons honey
½ teaspoon salt, divided
1 teaspoon dried thyme
¼ teaspoon freshly ground black pepper
4 4-ounce beef tenderloin steaks, sliced (1-inch thick)
To make
Serve this signature dish with mashed potatoes with garlic and stewed green beans, and top with a bottle of cabernet Sauvignon.
Preheat the broiler.Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the onion to the skillet. Cover and cook for 3 minutes. Add the vinegar, honey, and 1/4 teaspoon salt to the pan. Reduce the heat and simmer uncovered for 8 minutes or until slightly thickened, stirring occasionally.Sprinkle the beef evenly with the remaining 1/4 teaspoon salt, thyme, and pepper. Place the beef on a baking sheet greased with cooking spray; bake for 4 minutes on each side or until desired browning. Serve with the onion mixture.
