Ingredients
1 can black peas (15.8 oz)
1 can yellow corn (11 oz) with red and green bell pepper
3 plum tomatoes, peeled and chopped
1 small sweet onion, chopped
1 cup hot piquante sauce
¼ cup chopped fresh cilantro
2 garlic cloves, minced
2 tablespoons fresh lime juice

Instead of fish eggs, this southern version of caviar uses home-cooked vegetables. Prepare it a day in advance to get the best taste.
Wash and dry the peas and corn.Combine the peas, corn, tomatoes, and the following 5 ingredients in a serving bowl; cover and refrigerate for at least 2 hours. Serve with tortilla chips.
