1 can pinto beans (15 oz), washed and dried
½ cup chopped onion
2 tablespoons chopped fresh cilantro
2 teaspoons fresh lime juice
½ teaspoon kosher salt
½ jalapeno pepper, unseeded
½ cup chopped plum tomatoes
1 tablespoon toasted pumpkin seeds
To make
Fiber-rich, low-fat pinto beans are the base of this delicious sauce, flavored with lime, cilantro and jalapeno. Serve with baked tortilla chips. This spread can also be used to decorate quesadillas or vegetarian tacos.
