Three-Bean Chili

Ingredients
2 teaspoons olive oil
1 cup chopped onion
½ cup chopped green bell pepper
2 teaspoons bottled minced garlic
¾ cup water
2 tablespoons tomato paste
2 teaspoons chili powder
2 teaspoons ground cumin
¼ teaspoon black pepper
1 can garbanzo beans (15 1/2 ounces), rinsed and dried
1 can red beans (15 1/2 ounces), rinsed and dried
1 can black beans (15 1/2 ounces), washed and dried
1 can Organic vegetable stock (14 1/2 ounces) (such as Swanson Organic Certified)
1 can unsalted tomatoes, diced, not peeled (14 1/2 oz)
1 tablespoon yellow corn flour
¼ cup chopped fresh cilantro
6 tablespoons low-fat sour cream
To make
Add corn muffins to this three-bean chili recipe and you'll have a delicious dish.
Heat the olive oil in a large saucepan over medium-high heat. Add the onion, bell pepper and garlic to the pan; simmer for 3 minutes. Add 3/4 cup water and the following 9 ingredients (including diced tomatoes); bring to a boil. Reduce the heat and simmer for 8 minutes. Add the cornmeal; cook for 2 minutes. Remove from heat; add cilantro. Serve with sour cream.
