Ingredients

1 teaspoon olive oil
1 cup finely chopped onion (about 1 medium size)
2 tablespoons all-purpose flour
1 clove garlic, minced
1 ½ cups 1% low-fat milk
1 bay leaf
½ cup (2 oz) shredded gorgonzola cheese
¾ cup (3 oz) grated Parmigiano Reggiano cheese, divided
¼ teaspoon salt
2 cups raw pasta (about 8 ounces)
Cooking Spray

чашка cup of panko (Japanese breadcrumbs)
⅛ a teaspoon of freshly ground black pepper

Heat the oil in a medium saucepan over medium-high heat. Add the onion to the pan; cook for 8 minutes or until tender, stirring occasionally. Add flour and garlic; cook for 1 minute, stirring constantly. Add the milk and bay leaf and bring to a boil. Cook for 2 minutes or until thickened, stirring constantly with a whisk. Add the gorgonzola, 1/2 cup parmesan reggiano and salt; stir until the cheese is melted. Discard the bay leaf.Preheat the oven to 375 degrees.Boil the pasta in boiling water for 5 minutes or until almost soft, without adding salt or fat; strain well. Add the pasta to the cheese mixture, stirring well. Place about 1/2 cup of the pasta mixture in each of the 6 baking tins (1 cup each), smeared with cooking spray. Sprinkle evenly with the mozzarella. Sprinkle evenly with the remaining pasta mixture. Combine remaining 1/4 cup parmigiano-reggiano and panko; sprinkle evenly over pasta. Drizzle lightly with cooking spray; sprinkle with black pepper. Bake at 375 degrees for 25 minutes or until they are warmed through.
