Three-Cheese White Pizza with Spinach

Ingredients
1 pound chilled fresh pizza dough
2 tablespoons olive oil, divided
4 garlic cloves, thinly sliced
6 cups fresh spinach
1 part cup low-fat ricotta cheese
2 ounces grated partially low-fat mozzarella cheese (about 1/2 cup)
2 ounces grated pecorino Romano cheese (about 1/2 cup)
3 tablespoons low-fat 2% milk
1 clove garlic, minced
1 tablespoon cornmeal

Slices of fresh garlic are baked on top of this creamy white pizza with spinach and three types of cheese. Spinach is kept fresh by adding it to the pizza near the end of cooking. The better the ricotta cheese, the more creamy and delicious the pizza is; we prefer the Calabro brand.
Remove the dough from the refrigerator. Let stand at room temperature, covered, for 30 minutes.Place a pizza dish or a thick baking tray in the oven. Preheat the oven to 500 ° (leave a pizza stone or baking tray in the oven while it warms up).Combine 1 1/2 tablespoons olive oil and chopped garlic in a large skillet. Cook over medium-high heat for 1 1/2 minutes or until the garlic begins to sizzle. Add 6 cups of spinach; simmer for 2 minutes or until the spinach wilts. Set aside.Combine the cheeses, milk, and minced garlic in a bowl.Roll out the dough into a 14-inch circle on a lightly floured surface and prick the entire surface liberally with a fork. Carefully remove the pizza pit from the oven. Sprinkle the pizza crust with cornmeal; place the batter on the pizza crust. Spread the cheese mixture over the dough, leaving a 1/2-inch thick rim. Bake at 500 ° C for 10 minutes or until the crust is golden and the cheese is lightly browned. Sprinkle spinach on top; bake for another 2 minutes or until fully warmed through. Remove from the oven; brush the outer crust with the remaining 1 1/2 teaspoons butter. Cut into 6 large slices.
