Three-Grain Breakfast Cereal with Walnuts and Dried Fruit

Ingredients
½ cup maple syrup
⅓ cup of honey
3 tablespoons canola oil
1 ½ tablespoons vanilla extract
4 ½ cups plain oatmeal
1 cup raw instant barley
¾ cup chopped walnuts or pecans
½ cup wheat germ
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Cooking Spray
1 pack of crushed dried fruit (7 oz.) (e.g. Sun-Maid brand)
To make
This blend of barley and oats with nuts and raisins will keep you toned all morning. Walnuts are packed with omega-3 fatty acids, but pecans also go great with this high-fiber cereal. Serve with yogurt or milk, and top with fresh fruit.
Preheat the oven to 325 degrees.Combine the first 4 ingredients, stirring with a whisk.Combine the oats, barley, walnuts, wheat germ, cinnamon, and nutmeg in a large bowl. Add the syrup mixture; mix well to coat. Spread the oatmeal mixture evenly over the jelly roll pan, smeared with cooking spray. Bake at 325 degrees for 30 minutes or until they are lightly browned, stirring every 10 minutes. Add dried fruit. Allow to cool completely.Note: Store in an airtight container for up to 5 days.
