Tofu Bites

Ingredients
1 pound water-packed low-fat tofu, rinsed and cut into 1/2-inch cubes
1 ½ teaspoons vegetable oil
1 teaspoon dark sesame oil
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
To make
Serve cold or at room temperature with toothpicks.
Arrange the tofu on several layers of thick paper towels. Cover the tofu with extra paper towels and let it stand for 5 minutes, wringing out occasionally.Heat the oil in a large nonstick skillet over medium-high heat. Add the tofu; saute for 7 minutes or until lightly browned. Transfer to a large bowl. Drizzle with soy sauce and vinegar; stir gently to coat. Cover and refrigerate for at least 1 hour, stirring occasionally.
