Tomato Pizza with Garlic and Smoked Gouda

Ingredients
½ pizza dough recipe

1 tablespoon cornmeal
½ cup (2 oz) grated smoked Gouda cheese
1 ½ cups chopped plum tomatoes (about 4)
2 teaspoons olive oil
2 garlic cloves, minced
½ teaspoon freshly ground black pepper
2 tablespoons thinly sliced fresh basil

Juicy tomatoes and smoked cheese give this pizza a BLT-like flavor. Plum tomatoes work best because of their hardness, but any variety will do. We pre-baked the cake for a few minutes, so that the tomatoes did not make it raw.
